Swiss Chard may be harvested in the garden all summer until the first hard frost, and either harvested while the leaves are young and tender( bigger than 4″), or after maturity when they are larger (8 to 12″and have slightly tougher stems. Harvest the outer leaves at the base of the stalk, leaving four to five inner leaves to continue growing. Harvesting is a continual process, as most species produce 3 or more crops. Bothe the leaves and stalks can be eaten raw or cooked.
